Inspired by the industrious and adorable, Black-capped Chickadees, who cache seeds around the farm to eat throughout the winter, we created our largest wheel yet. Black Capped Cache is a large format, aged raw milk cheese with wheels averaging 10-12 lbs. Its a hardy mountain cheese that melts beautifully, but can also stand alone on any cheese board. The washed rind adds a slight funk that blends well with the buttery flavor of the cheese. We make it seasonally in the fall with our rich and creamy Jersey milk.
